The theme for Monday posts in January is Winter Greens.
By January my provide of winter squashes from my potager is dwindling and I get to purchase winter greens.
I attempt to make all greens enjoyable – these will probably be a few of our favorites.
At this time – Sunchokes. So many names for such a small vegetable.
Conventional identify: Jerusalem Artichokes. This identify, it’s thought, appears to have been an English corruption of the Italian girasole (sunflower) articiocco (tasted much like an artichoke).
Present identify(s): Sunchoke, wild sunflower, earth apple.
French identify: Topinambur.

Notes
They don’t get crispy, like potatoes, so be a bit cautious when taking them off the baking sheet. Nonstick or lining with parchment paper will work greatest.
In case you selected to peel them, preserve them in a bowl of water (earlier than slicing) as you’re employed as they discolor rapidly.
