Pat 1½ lb. skirt steak, reduce into 5″ items, dry, then prick throughout on each side with a paring knife.

Stir collectively ⅓ cup extra-virgin olive oil, 2 Tbsp. floor cumin, and 3 tsp. Diamond Crystal or 1¾ tsp. Morton kosher salt in a medium bowl; season with freshly floor pepper. Finely grate in 4 garlic cloves and stir to mix. Add steak and switch to coat. Let sit 10 minutes.

In the meantime, stir collectively 1 cup plain whole-milk yogurt, 1 Tbsp. recent lemon juice, 1½ tsp. Diamond Crystal or ¾ tsp. Morton kosher salt, and remaining 1 Tbsp. extra-virgin olive oil and 1½ tsp. floor cumin in a small bowl; season with pepper. Finely grate in remaining 2 garlic cloves and stir to mix. Set yogurt sauce apart.
Step 4
Warmth a dry giant cast-iron skillet over medium-high. Elevate
steak from marinade, letting extra drip again into bowl; switch to skillet. Cook dinner till
deeply browned and an instant-read thermometer inserted into the thickest half registers
125°, about 2 minutes per aspect for medium-rare. Switch to a reducing board and let relaxation
10 minutes.
Step 5
In the meantime, prepare 1 giant bunch scallions, reduce into 2″ items, in identical skillet; season with salt. Cook dinner, stirring typically, 1 minute. Pour in ½ cup water and cook dinner, stirring often, till evaporated and scallions are wilted, about 2 minutes.
Step 6
Slice steak in opposition to the grain; prepare on a platter. Place scallions and 1 giant jalapeño, thinly sliced, alongside. Serve with 4 pitas with pockets, halved, and reserved yogurt sauce for constructing pitas.
