Mont d’Or cheese is particular. Solely in season from 10 September to 10 Could, ripened in spruce wooden instances and stickily scrumptious! And this recipe for baked Mont d’Or cheese with wine is sort of merely – elegant.

Editors tip: In case you can’t get vin jaune, use dry white wine as a substitute.

SERVES 8
Preparation: quarter-hour
Cooking: 35 minutes

INGREDIENTS

1 baguette
⅓ cup (80 ml) olive oil
10 garlic cloves, peeled, shoots eliminated
1 Mont d’Or cheese
2 ½ cups (600 ml) vin jaune (this wine is offered completely in 620 ml bottles)
Freshly floor black pepper

METHOD

Preheat the oven to 300°F–325°F (150°C–160°C).

Put together some croutons: lower the bread, drizzle with olive oil, and grill within the oven till gentle brown.

Rub the croutons with the garlic and put aside.

Lower a gap into the middle of the Mont d’Or, reserving the highest, and pour within the quantity of vin jaune you want, a minimum of a scant ½ cup (100 ml). Press the items of garlic into the cheese.

Cowl the central gap with the reserved piece of cheese. Place the cheese in its field, wrap the field in aluminum foil, and bake for about 35 minutes.

Take away as quickly as it’s melted to your liking. Give a number of grinds of the pepper mill and serve instantly, to eat with spoons and croutons.

The Mont d’Or cheese is a specialty of the Jura area in jap France, and takes its title from the best mountain there. It’s offered in a field manufactured from spruce. Extremely prized vin jaune, or yellow wine, is produced in the identical area from the Savagnin grape, and is aged for a requisite time of six years and three months, throughout which era it acquires its attribute yellow color.
