These might be soups that may be made forward and served chilly or room temperature.
When the new days of summer time arrive I like to have the ability to do some, or all, of the cooking within the morning. Typically which means making your entire dinner and having it within the fridge, to be served chilly. Chilled Yellow Tomato Soup

- 1 medium yellow onion, chopped
- 1/2 yellow bell pepper, chopped
- 4 giant yellow tomatoes, peeled, chopped

- 1 tbs olive oil
- 1/2 cup hen broth
- Garnish
- Small purple basil leaves
- Warmth olive oil in a medium saucepan.
- Add onion, pepper, carrot, and sauté till tender, about 5 minutes.
- Add tomatoes, hen broth, cowl, scale back warmth and simmer 10 minutes.
- Purée in blender.
- Chill soup or permit to chill to room temperature.
- When able to serve:
- Ladle the soup into bowls, high with basil leaves.
Notes
Peel tomatoes by blanching in boiling water for 30 seconds first. The peels slip off simply.
