Le Mermoz is a contemporary bistro with honest service and a very good choice of pure wines. What units it other than all the opposite comparable bistros within the eleventh is that it’s not within the eleventh. It’s within the eighth, mere steps from the Champs-Elysées. Thomas Graham’s dishes are seasonal and comparatively easy – most have just a few parts. Positive, a few of them may be dear, like caviar adorning a beurre-blanc bathed tomato (above). Others may be unique, like corn sautéed with huitlacoche (beneath), served with seared tuna and molé. However Graham’s dishes make sense – they’re balanced, constructed on wonderful substances, and scrumptious.
