Black Bean Soup

- 4 bay leaves
- 2 carrots, chopped
- 1 rib celery, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 purple pepper, chopped
- 1 tsp cumin
- 2 chili powder
- 2 tsp oregano
- 1 tbs tomato paste
- 5oz (150gr) metropolis ham
- Put beans in a big pot, cowl with water and permit to soak for not less than 3
- hours. Drain.
- Add 8 cups of water to beans and convey to a boil over medium warmth.
- Add Prosciutto and bay leaves.
- Simmer, lined for 1 1/2 – 2 hours.
- When beans are tender, take away bay leaves.
- Add all greens to soup together with herbs and spices.
- Cowl and simmer till greens are tender, about half-hour.
- Lower ham into small items, add to soup.
- Stir in tomato paste. Serve.
Notes
Nation ham is dried, like Prosciutto, Serrano, and so on. Metropolis ham is the pink ham, usually baked for holidays. This soup has each.
