Chunky Turkey Vegetable Hash; spring · Thyme for Cooking


My mom typically made hash with the leftover beef and potatoes from a Sunday pot roast.

She used the cooked (clearly) potatoes and beef together with a uncooked onion and put the whole thing by a meat grinder.

She then fried it in her forged iron skillet like an enormous pancake. When it began getting crispy bits she would break it up, flip it, pat it down and fry it some extra.

The household was divided about easy methods to eat it: half slathered it with good outdated yellow mustard, the opposite half poured leftover gravy on high.

This isn’t that.

I’ve by no means made my mom’s hash…. I prefer it chunky.

Chunky Turkey Vegetable Hash

Turkey Vegetable Hash

A straightforward Skillet Dinner, filled with flavorful veggies and a little bit of turkey. Hen, beef or pork would work as effectively.

  • 2 medium potatoes (10oz, 300gr complete weight), lower into bite-size items
  • 2 medium carrots, in half lengthwise, then thinly sliced
  • 1 rib celery, sliced
  • 1/2 orange bell pepper, chopped
  • 1 onion, chopped
  • 4oz (125gr) mushrooms, trimmed, sliced
  • 2 cloves garlic, minced
  • 10oz (300gr) turkey tenderloin or cutlets, lower into bite-size items
  • 1 tbs olive oil
  • 1/4 cup (2oz, 60ml) hen broth
  • 3 tbs ketchup
  • 1 tbs Dijon-style mustard
  • 1 tbs soy sauce
  • 1 tsp oregano

  • Warmth olive oil in giant skillet over medium – excessive warmth.
  • Add onion, pepper, carrot, celery, and sauté 5 minutes.
  • Add potatoes and sauté 5 minutes longer.
  • Add garlic, mushrooms, turkey, and sauté 5 minutes, till turkey is browned.
  • Add broth, ketchup, mustard, soy sauce, oregano and stir to mix.
  • Cowl, flip warmth to medium-low and prepare dinner till potatoes and greens are cooked by, 5 – 10 minutes longer.
  • Serve.

Notes

This can be a versatile dish – use roughly of any of the greens, and any meat you want – or tofu.

Spring!

The season that we look ahead to all winter so we will be outdoors, having fun with the nice and cozy sunshine.

We anxiously wait throughout April showers for a dry day so we will be out working.

Right now was such a day.

That’s when one realizes that there’s 5 weeks of gathered work that must be performed in a single afternoon.

Sigh….
