Step 1
Place a rack in center of oven; preheat to 400°. Organize 6–8 skinny slices prosciutto on a parchment-lined baking sheet, overlapping by not more than ½” if wanted, and bake till crisp, 7–9 minutes. Let cool.
Step 2
In the meantime, prepare dinner 2 lb. inexperienced beans, trimmed, in a medium pot of boiling generously salted water till brilliant inexperienced and crisp-tender, about 4 minutes. Drain beans; switch to a big bowl of ice water and let cool. Drain inexperienced beans and totally pat dry with a kitchen towel or paper towels. Put aside.
Step 3
Cook dinner ⅔ cup extra-virgin olive oil and ½ cup coarsely chopped blanched hazelnuts in a medium skillet over medium warmth, stirring usually, till hazelnuts are golden brown, 5–7 minutes. Add 1 giant shallot, finely chopped, 3 garlic cloves, finely chopped, zest of 1 medium lemon, ¼ cup contemporary lemon juice, ¼ cup crimson wine vinegar, 2 Tbsp. honey, 2 tsp. Dijon mustard, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt to bowl with nuts and oil and whisk to mix; generously season French dressing with freshly floor pepper.
Step 6
Add dates and reserved inexperienced beans to French dressing and toss to coat. Style and season with extra salt and pepper if wanted. Switch inexperienced bean combination to a platter or giant shallow bowl. Crumble prosciutto into small shards and scatter over inexperienced bean combination.
Do Forward: Prosciutto may be baked 4 hours forward; retailer, loosely coated, at room temperature. Inexperienced beans may be blanched 1 day forward; pat dry, switch to an hermetic container and chill. Nuts may be cooked 1 day forward; switch to an hermetic container together with oil and retailer at room temperature.
