Hen & Broccoli, colours · Thyme for Cooking


I blame it on spring.

With all of the flowers blooming in every single place, coloration is coming again to the countryside.

So I need extra coloration on my plate.

It typically looks as if I are likely to monochrome meals within the winter… White with rooster, cauliflower, and rice; or orange with pumpkin, tomatoes and sausages.

Now it’s spring – be colourful!

Chicken and Broccoli

This can be a colourful dish stuffed with capers, olives, peppers and garlic, made like a stir-fry, leaving the greens with a little bit of crunch. Oven fries work effectively with this.

  • 2 rooster breasts, (12oz, 360gr whole) boneless, skinless, lower in half
  • 1/2 head of broccoli or one small head, lower into florets
  • 1/2 pink bell pepper, roughly chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup olives, black or inexperienced, lower in half
  • 1 tbs capers
  • 1 tsp dried marjoram
  • 3 tbs white wine
  • 1 tbs olive oil

  • Warmth oil in medium nonstick skillet.
  • Add onions, pepper, broccoli, and sauté 5 minutes.
  • Add garlic and sauté one other 2 minutes.
  • Take away greens to a bowl or platter and canopy.
  • Add rooster to skillet and sauté 6 – 8 minutes per aspect, or till nearly carried out.
  • Return greens to skillet, add olives, capers, marjoram and wine.
  • Stir to mix.
  • Cowl, scale back warmth to low and simmer one other 7 – 8 minutes to mix flavors.
  • Prepare on a small platter and serve.

Notes

Substitute 3 tbs rooster broth plus 1 tsp lemon juice for the white wine.
The pepper that I used was half inexperienced / half pink.
