The theme for Monday posts in June is…. Summer season Soups.
These shall be soups that may be made forward and served chilly or room temperature.
When the recent days of summer time arrive I like to have the ability to do some, or all, of the cooking within the morning. Typically meaning making the complete dinner and having it within the fridge, to be served chilly. Different occasions I simply make the edges and marinate the meat to be cooked afterward the barbecue.
A simple soup, served chilled on a scorching summer time day, is all the time welcome.

Lettuce Soup
By no means considered making Lettuce Soup? Smart way to make use of it when the backyard / market goes loopy.
- Prep Time: 10 minutes
- Prepare dinner Time: 20 minutes
- Complete Time: half-hour
- Yield: 2 servings 1x

- 1 1/2 cups (12oz, 360ml) hen broth
- 4 cups chopped / shredded lettuce
- 1 – 2 tbs contemporary tarragon, chopped
- 1 small (4oz, 120gr) potato, chopped
- 1 small onion, chopped
- 1 tbs olive oil
- 2 tbs contemporary basil, chopped
- Garnish:
- 4 tsp plain yogurt or bitter cream
- 2 slices bacon (2oz, 60gr) fried crisp and crumbled
- Warmth oil in saucepan and sauté onion for two minutes.
- Add potato, broth and convey to a boil.
- Cowl and simmer quarter-hour.
- Uncover the saucepan and stir within the lettuce and tarragon.
- When lettuce has wilted (nearly instantly) take away from warmth and purée in a blender.
- Put aside to chill to room temperature or refrigerate for colder.
- Fry bacon till crisp.
- Take away, drain on paper towel and crumble.
- When able to serve ladle into bowls, dollop 2 tsp of yogurt onto every serving, and prime with chopped basil & bacon.
Notes
Use the leaves that aren’t ‘fairly’ sufficient for a salad. Higher than tossing them within the compost!
We choose this made forward and served chilly, straight from the fridge. Chill bacon if cooked or fry on the final minute.
