  • 2 rooster breasts, (12oz, 360gr complete) boneless, skinless, minimize into bite-size items
  • 1/2 purple bell pepper, sliced into strips, strips minimize in half
  • 1 onion, quartered, then sliced
  • 2 cloves garlic, minced
  • 12 dry-cured or Greek olives, minimize in half
  • 2 tbs capers
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tbs olive oil
  • 2 tbs white Balsamic vinegar
  • 1/4 cup (2oz, 60ml) sherry
  • 1/2 cup (4oz, 120ml) rooster broth
  • 2 tsp cornstarch (maizena, corn flour) dissolved in 1 tbs water
  • 1/2 cup (3oz, 90gr) orzo
  • 1 1/4 cup (10oz, 300ml) rooster broth
  • 3oz (90gr) spinach or different spring greens
  • Prepare dinner orzo in rooster broth, lined, till finished. 
  • Uncover and drain if wanted.
  • Fluff with a fork and permit to chill till wanted.
  • Warmth oil in a big skillet over medium-high warmth. 
  • Add cumin, paprika, herbs, and sauté briefly. 
  • Add onion, peppers, garlic, rooster and sauté till greens are tender and rooster is browned on all sides. 
  • Add sherry, vinegar, broth, and produce to a simmer.
  • Dissolve cornstarch in water and add, stirring till thickened. 
  • Take away from warmth and add olives and capers.
  • To End: 
  • Put together spinach or greens and organize on two plates. 
  • Divide orzo and spoon on prime of greens. 
  • Divide rooster and spoon on prime of orzo. Serve.

Notes

You may use rice, barley, quinoa, and many others. rather than orzo.
