The seasons are altering.

Pork Tenderloin with Avocado Sauce
The pesto rosso and prosciutto add a number of taste to this simple roasted Pork Tenderloin.

- 2 slices prosciutto (1oz, 30gr)
- 1 tbs pesto rosso
- handful of basil leaves
- 1 tsp chili powder
- 1 avocado
- 2 tbs white balsamic vinegar
- 1 tbs pesto
- 1 tbs rooster broth
- With a pointy knife, butterfly pork (see notes).
- Layer the Prosciutto, pesto rosso and basil leaves.
- Roll the tenderloin again up and tie with kitchen string.
- Sprinkle with chili powder.
- Lay on a baking sheet and roast, 25 minutes at 400F (200C).
- Take away, cowl loosely with foil and let relaxation 5 minutes.
- Purée avocado, vinegar, pesto and rooster broth
- To serve:
- Reduce pork into 1″ (2.5cm) slices.
- Spoon avocado sauce on plates, prepare pork slices on prime.
Notes
Reduce pork in half lengthwise leaving 1/4 inch intact – so to open it like a guide.
