  • Take away from warmth and refrigerate till completely chilled – or longer.
  • To serve:
  • Purée soup in blender.
  • Add 1/4 to 1/2 cup of milk or cream, stirring, till you have got desired consistency. Serve, garnishing every bowl with freshly snipped chives.

Notes

In case your leeks are typically sandy: slice in half lengthwise and rinse below working water, fanning the layers, to get out any remaining sand.
